You will need a madeleine pan for this recipe.
Ingredients
2 eggs
1/3 cup (3 oz./90g) granulated sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 cup (2/1/2 oz/75g) all-purpose flour, sifted
1 tsp. grated lemon zest
4 Tlbs.(1/2 stick, 2 oz/60g) unsalted. butter, melted and cooled
Confectioners' sugar for dusting
Directions
Preheat oven to 375
Use a. pastry brush to brush. softened butter over. madeleeine pan
Dust. mold with flour
Use a hand held mixer and combine. eggs, granulated sugar and soft. butter. Beat until fluffy, about 5 minutes
Beat in vanilla and almond extracts
Sprinkle. sifted flour over egg mixture and beat on low speed to incorperate
Fold in 1/2 the melted butter and the lemon zest
Fold in the remaining butter
Divide batter evenly among the the molds
Bake for. 8 to 12 minutes. The tops should spring back. when lightly touched
Remove the. pan. from oven and place madeleines on wire rack. to cool
Using a fine-mesh sieve, dust. madeleines with confectioner sugar
